Crusty Baked Vegetables

Give garden vegetables, such as squash, zucchini and tomatoes, a crusty topping of Chatham Village® Large Cut Cheese & Garlic Croutons.

Ingredients

Preheat the oven to 350° F. Butter a shallow baking dish. Heat 2 tablespoons oil in a skillet; add onion and sauté until tender. Add garlic and cook an additional 1 to 2 minutes. Remove from heat. Place the onion mixture in the bottom of the prepared baking dish. Layer the remaining vegetables in concentric circles or rows. Season vegetables with salt, black pepper and herb blend; and cover with crushed croutons.

Bake for 25 to 30 minutes. Sprinkle with chopped parsley. Serve
